To make classic Fish and Chips, you'll need the following ingredients and follow these general steps:


Ingredients:



For the Fish:

- White fish fillets (such as cod, haddock, or pollock)

- All-purpose flour

- Baking powder

- Salt

- Cold sparkling water or beer

- Vegetable oil for frying


For the Chips (Fries):

- Potatoes

- Vegetable oil for frying

- Salt


Instructions:


1. Prepare the Fish:

   - Cut the fish into fillets of your desired size.

   - In a mixing bowl, combine flour, a pinch of salt, and baking powder.

   - Gradually whisk in the cold sparkling water or beer until you have a smooth batter.

   - Let the batter rest for about 15 minutes.


2. Prepare the Chips (Fries):

   - Peel and cut the potatoes into thick strips, similar to the size of fries.

   - Rinse the cut potatoes in cold water to remove excess starch.

   - Dry the potatoes thoroughly with a clean kitchen towel.


3. Fry the Chips:

   - Heat a large pot or deep fryer with vegetable oil to about 325-350°F (165-175°C).

   - Fry the potato strips in batches until they're pale golden and slightly soft but not browned. Remove and drain on paper towels.


4. Fry the Fish:

   - Increase the oil temperature to 375-400°F (190-200°C).

   - Dip the fish fillets into the batter, allowing any excess to drip off.

   - Carefully place the battered fish into the hot oil and fry until golden brown and crisp, usually about 5-7 minutes. Make sure the fish is cooked through, and the internal temperature reaches 145°F (63°C).


5. Serve:

   - Drain the fried fish and chips on paper towels to remove excess oil.

   - Season with salt while they're still hot.

   - Serve with your favorite sides such as mushy peas, tartar sauce, or malt vinegar.
